TOOLS
A blender
INGREDIENTS FOR 1 TO 2 SERVINGS
1 Cup is 250 ml.
1/4 C chia seeds
1 TBSP almond butter
1+ 1/4 C spring water
1/4 tsp cinnamon
1/4 tsp vanilla extract or seeds of 1/4 vanilla pod
2 pitted dates
Dash of sea salt
INSTRUCTIONS
Place the chia seeds in a bowl and set aside
Warm up the water to about 122°F/50°C to 140°F/60°C
Blend the other ingredients with the warm water into a smooth milk
Pour this mixture on top of your chia seeds and mix well with a spoon
Cover up and let the seeds well for about 5 to 10 minutes
Stir in between shortly to create a nice, even and thick gelatinous mixture
Finish with some blueberries, blackberries and serve/eat right away
TIPS
You can keep the pudding warm in your dehydrator/oven at 108°F/42°C or on top of the heat while waiting
For even more energy or a delish variation, add a spoon raw cacao powder
If you decide to add cacao powder, blend an extra date with the other ingredients to sweeten
A leftover can be stored in the fridge, where it will thicken and become a firm pudding
Or make your overnight Chia stock for a week in small jars that you can grab and take
Easy to take to work for a super quick lunch or as a healthy snack for renewed focus and stamina
