Summer. The sun is burning and you’re longing for a cooling snack. This is the perfect moment to open your freezer, take out some frozen berries and whip up your delicious healthy instant sorbet. Simple, stunning, sweet…

 

TOOLS

 

  • Blender
  • Fridge
  • Ice scoop

 

INGREDIENTS

SORBET

 

  • 1 C of frozen mixed berries or berries of your choice
  • 1 raw date or 1 TBSP of agave per cup of berries
  • 1/8 C spring water per cup (start with less)

 

CHOCOLATE SAUCE

 

  • 1 TBSP agave
  • 1 tsp raw cacao powder
  • Dash of cayenne (optional)

 

INSTRUCTIONS

 

  • Wisk the sauce ingredients together in a small bowl and set aside
  • Throw the frozen berry mix, sweetener and water in the blender
  • Blend into a firm sorbet (not too long so your ice cream doesn’t melt)
  • Serve immediately with a stripe of chocolate sauce and a basil leaf on top

 

TIPS

 

  • Find a field where you can pick fresh berries on a summer day
  • Always buy more of the specific fruit of the season and freeze them in zip lock bags: they taste at their best in their particular season and are cheaper
  • Old bananas? Peel, break and freeze! They make the best sorbet.
  • Create variations of frozen fruits for sorbets
  • These sorbets make a real healthy treat for your kids and for you
  • Your sorbet isn’t sweet enough? Add an extra date or agave
  • You can replace the sweetener by adding a frozen banana
  • The chocolate sauce keeps well for weeks in the fridge
