Sweet Broccoli Salad

 
 

What to do with broccoli when you don’t want to cook your foods? Its particular structure seems not that attractive and is kind of challenge in a living cuisine. But challenges are opportunities! As soon as you know how to soften its crunchiness, how to sweeten its bitterness, broccoli becomes so accessible, even with its raw bite. 

 

You will love the easiness of this super fast and surprisingly lovely dish. It only takes 10 to 15 minutes to serve dinner.

 

TOOLS

 

  • Food processor

  • Blender

 

DRESSING

 

Blend

  • 1 C raw cashew or macademia nuts (cashews make a softer dressing)

  • 2 TBSP apple cider vinegar

  • ¼ à ½ tsp sea salt (always start with less and add to your own taste)

  • 3 TBSP date paste (simply blend a few dates with some water)

  • ¼ C spring water

 

INGREDIENTS SALAD

 

  • 1 medium broccoli

  • 1 red onion

  • 1 spring onion

  • 1 C sunflower seeds, soaked for 20 minutes (while you’re prepping the rest)

  • ½ to 1 C raisins

 

INSTRUCTIONS

 

  • Place the roughly cut broccoli, spring onion and onion in the food processor

  • Pulse until you have a coarse, rice-like structure

  • Transfer everything to a large bowl

  • Mix the raisins and seeds in by hand

  • Pour the dressing on top

  • Stir well until everything is nicely coated

  • Take a ring mold and shape a nice tower on your plate

  • Serve as a tasty fancy starter or with salad as a main meal

 

 

TIPS

 

  • This broccoli salad brings spice to every “boring” salad

  • Try out other dried fruits such as apricots, figs

  • If you don’t want to use macadamias or cashews, replace them by pine nuts

  • An “ice cream scoop” of this salad in a collard leaf makes a wonderful wrap!

  • Or serve a firm scoop in a beautiful bordeaux radicchio leaf
