Twin Towers

 
 

Making your food beautiful is a big part of staying inspired and motivated. It only takes one more minute to dress up your plate and you will eat with so much more lust.  Keep it classy and your soul memories will feel nourished too. 

 

Marinating is a wonderful technique to give a “cooked” look to your vegetables. Especially in winter, your eye and mind will love this extra soft touch and bite. 

 

      INGREDIENTS FOR MARINATED MUSHROOMS (serves 2)

 

      About 1 pound/450 g. of mushrooms 

      A handful of parsley

      Some thyme

      A sprig of rosemary

      Olive oil

      1/4 tsp sea salt 

      Some black pepper

      A small handful of pine nuts (optional but nice!) 

 

      INSTRUCTIONS FOR MARINATED MUSHROOMS

 

       Slice up the mushrooms 

       Pour enough olive oil on top and coat well

       Chop up the herbs and stir them under the mushrooms

       Set aside and let them marinate for 30 minutes, while you continue with the rest

 

       INGREDIENTS FOR SPICY GUACAMOLE

 

       1 ripe avocado

       ¼ tsp sea salt (to taste) 

       ½ red onion, minced finely

       1 Jalapeño pepper without seeds, minced finely

       1 TBSP fresh lemon or limejuice

        ¼ C of fresh cilantro

       A dash of cayenne powder 

       

       INSTRUCTIONS GUACAMOLE

 

       Mash up or blend the avocados with the seasonings and lemon juice

       Add the fine cubes of hot pepper

 

       TIPS

  

In winter, warm up the prepared mushrooms in your dehydrator or oven at 108°F/42°C for 1 hour

This dish makes a lovely and fancy looking starter when you serve them as “twin towers”

No time? Skip getting fancy and scoop up on a plate. It tastes just as good when it’s messy :-)

Don’t over process avocados: their taste can turn and become bitter
